How to make it in the restaurant business: Serve 1 million chicken dinners.

Restaurants & Institutions released its top 100 independent restaurants list today, which ranks them by revenue (and, as such, looks a little like the MPAA's recent accounting of "independent" film budgets). No. 1 on the R&I countdown was Tao in Las Vegas, with a whopping $66 million in revenue. Outside of Lawrys (no. 67, $12 million), nothing in LA touched the top 100. That would have meant beating out Montgomery Inn in Cincinnati, which earned $11 million by serving a half-million rib dinners a year. (And they don't come close to serving the most.) Great site, I love finding gems online, this list is incredible, but also it is something that should be noted by anyone thinking of opening their own restaurant. What did they do, to get to this point, other than having a bucket load of money that it. But still one should study these restaurants and follow their lead.
